I microwave my squash for a bit for easier cutting then cut it in half, coat with EVOO, s&p, and baked it for about 30-40 minutes at 425

Shrimp Pasta with Creamy Mozzarella Sauce

8 oz penne pasta
Shrimp:
* 2 tablespoons olive
* 1 pound shrimp
* 3 garlic cloves minced
* 1/4 teaspoon salt
Creamy Sauce:
* 4 oz sun-dried tomatoes (without oil)
* 4 garlic cloves , minced
* 1 cup half and half
* 1 cup mozzarella cheese , shredded
* 1 tablespoon dried basil
* 1/4 teaspoon red pepper flakes , crushed
* 1/8 teaspoon paprika
* 1/2 cup reserved cooked pasta water
* 1/4 teaspoon salt
Cook pasta according to package instructions. Reserve some cooked pasta water. Drain the pasta.
Heat 2 tablespoons olive oil in a large skillet on medium-high heat. Add shrimp with minced garlic.  Cook the shrimp on one side for about 1 minute, until shrimp turns pink or golden brown on that side. While it cooks, sprinkle salt over the shrimp to cover every single shrimp. After 1 minute, Flip the shrimp over to the other side and cook for about 30 seconds or 1 minute more. The shrimp should be golden color or pink on both sides and not overcooked. Remove the shrimp to a plate, being careful to leave all the oil in the skillet.
How to make creamy sauce To the same skillet, add sun-dried tomatoes and more minced garlic. Saute sun-dried tomatoes in olive oil (remaining from shrimp) on medium heat, stirring, for 1 minute until the garlic is fragrant. Add half and half to the 3. hot skillet with sun-dried tomatoes and bring to boil. Add shredded cheese to the skillet, and quickly stir in while boiling. Immediately reduce to simmer. Continue cooking the sauce on low simmer heat, constantly stirring, until all the cheese melts and the creamy sauce forms. Add basil, crushed red pepper flakes, paprika. Stir. Add 1/4 teaspoon of salt gradually, stirring on low heat. Add cooked pasta to the sauce, and reheat gently on medium heat. Add the cooked shrimp, stir it in. Let everything simmer on low heat for a couple of minutes for flavors to combine.

Hey guys here’s my first fitness post!! I decided to post some of my favorite leg exercises that I always try to incorporate on my leg days 🏋🏼‍♀️💪🏼👩🏼‍🦰 1. Deadlifts: 4x10
Deadlifting is a Compound movement, which means it works multiple muscle groups at the same time; glutes, quads and hamstrings. It’s key to incorporate at least one compound movement during your gym sessions.
2. Overhead Bulgarian Split Squat: 4x10 each leg
Overhead exercises are great because they increase the difficulty of the movement while also promoting core strength and stability. I do these with a 35lb weight overhead, but for beginners I would start with just doing the split squat and work your way up to adding weight
3. Goblet Squats: 4x10
The reason I have my heels on the plate is to obtain greater depth when I squat, allowing for more range of motion
4. RDL deadlifts: 4x10
These target your hamstrings and glutes, it’s important to keep your spine neutral (back straight), slight bend in the knees, slow and controlled . . .

This Grilled Chicken with Artichokes, Sun Dried Tomatoes and Feta from @andiemmitchell was not only a huge hit in our house, but I got some feedback from the meal plan babes that they loved it too! 👌🏽
Save this and make later. 💁🏻‍♀️ It is that good! Delicious flavors, so fast and easy...the only chopping you have to do is for the salad you're going to want to serve it with! Not one to be missed babes.

GRILLED CHICKEN WITH ARTICHOKES, SUN DRIED TOMATOES AND FETA
4 6-ounce boneless skinless chicken breasts
3 tablespoons balsamic vinegar (or apple cider vinegar)
3 cloves garlic, minced (or 1 teaspoon garlic powder)
2 teaspoons dried basil
1 teaspoon dried oregano
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2/3 cup marinated artichoke hearts (from a jar packed in oil), drained of oil and roughly chopped
1/3 cup sun dried tomatoes (from a jar packed in oil), drained of oil and roughly chopped
2 ounces feta cheese (1/2 cup)
In a small bowl, whisk the cider vinegar, garlic, basil, oregano, oil, salt, and pepper. Pour the mixture into a gallon-size bag and add the chicken. Marinade and refrigerate for at least 30 minutes and up to 1 day, turning the bag occasionally.
Preheat your gas grill on high. When the grill is ready, remove the chicken from the bag and place on the grill. Cover and cook until the underside of the chicken is just beginning to develop light grill marks, 6 to 9 minutes. Flip the chicken, cover, and continue to cook 6 to 9 minutes longer.
Once the chicken is done, transfer the chicken to a plate, tent with foil, and let it rest for 5 minutes before topping with artichokes, sun dried tomatoes, and crumbled feta.

Normal people may take their days off by laying by a pool or going on a road trip. Me? Not so much. I'd rather spend my time with my running shoes on getting in as many miles as I can or throwing on my hiking shoes and spending some time in the mountains.

As good as it's felt to push my body and challenge myself, it's obvious that I'm feeling a bit more sore and inflamed than normal so to fix that, I've been doubling up on my Omega-3's.

Omega-3's are an essential fatty acid meaning your body can't produce them on it's own. You must get them through nutrition.

To get the appropriate amount of Omega-3's, it equals out to eating about 3.5 ounces of wild caught fish for at least 3 days out of the week. I mean I love salmon, but not that much.

Yaaaall it’s been a minute so here’s a little update: I’m dying over here!!! Ok not literally🙄 I just haven’t lifted in over a month! I literally can feel my muscles deteriorating😭 lol. -working 5 days a week, remodeling my house and mom life is really taking a toll on me and I just can’t seem to balance things out and actually make time for myself. Who loves a good smoothie bowl? 🙋🏼‍♀️It’s been a while since I made one, this bowl inspires me to start again. There are lots of ways to get your protein in the morning. Breakfast is so important it’s the longest time we go without food and a lot of people skip it. Eating breakfast helps to balance blood sugar, and sets the tone for the day. When you start the day with a healthy habit you are likely to continue with more. Recipe: 2 scoops Arbonne vanilla protein, unsweetened almond milk, frozen blueberries, & blend. Optional: top with your fav seeds or seed blend, coconut chips, or grain free granola. 😋

💕I needed to use up some spinach that was going bad, so I blended a bunch with some mixed frozen berries, strawberries, chia seeds, a half scoop of @vega_team vanilla protein powder and almond milk. I also added some frozen riced cauliflower just for fun- you can’t taste it at all, I promise💕

Easy homemade Apple pie! 🤤 First make the crust, cut it in half, roll out the bottom, and put it in the pie pan then leave it in the freezer for 1 hour. Cook the apples with the filling ingredients for 10 mins. Strain the water from the apples, and caramelize the water a side in a pan for 10 mins. Add apples to bottom pie pan, caramelized filling and cover with rolled out top pie crust. Brush the top with egg and sprinkle sugar. Bake at 375 F for 50-60 mins. Enjoy with ice cream! 🍨

Tarte aux pommes maison facile! 🤤 Commencez par faire la croûte, coupez-la en deux, déroulez le bas et placez-le dans le moule à tarte, puis laissez-le au congélateur pendant 1 heure. Cuire les pommes avec les ingrédients pendant 10 minutes. Filtrer l'eau des pommes et caraméliser l'eau d'un côté dans une casserole pendant 10 minutes. Ajouter les pommes au moule à tarte du bas, la garniture caramélisée et couvrir avec l'autre croûte à tarte. Brosser le dessus avec l'œuf et saupoudrer de sucre. Cuire à 375 F pendant 50-60 minutes. Dégustez avec de la crème glacé! 🍨
